  • 1 bottle good-quality dry cava or other brut sparkling wine
  • 2 tablespoons sugar
  • Minced zest and juice of 1 lemon
  • 4-6 fresh mint leaves

Introduction
Cava isn't just for celebrating; try this take on a granita to refresh on a hot day.
Directions
Pour the wine into a shallow metal pan that will fit in the freezer. Freeze it, uncovered, until almost solid, about 3 hours. Remove the pan from the freezer and break up the ice with a fork, scraping it from the sides of the pan. Add the sugar and the lemon zest and juice and mix thoroughly with a fork. If you prefer a sweeter taste, add more sugar. Reutrn to the freezer for 1 hour.
Tear the mint leaves into very small pieces, add to the ice mixture, and mix again with a fork, breaking up the ice mixture into small crystals. Spoon int tall glasses and let stand for about 10 minutes to melt slightly. By the time you serve the granita, it should be just liquid enough to drink thorough a straw.
