  • 3/4 pounds clams
  • 1 onion
  • 2 garlic cloves
  • 2 Tbs olive oil
  • 1 pound tomatoes
  • 1 cup dry white wine
  • 1 bay leaf
  • salt, black pepper
  • 2 Tbs finely chopped parsley

Directions
Peel and finely chop the onion and garlic and fry lightly in the oil. Skin the tomatoes, remove the seeds, ad cut the flesh into pieces. Add to the onion and garlic, together with the white wine, the bay leaf, the salt and the pepper. cover and simmer for 10 minutes. Wash and brush the clams thoroughly. Add them to the onion and tomato mixture and cook for 10 minutes over a low heat, until all the calms have opened. Discard any unopened ones. Serve sprinkled with parsley.
